Owner and one half of the driving force behind Patron. He and Tanzi (the other half) met back in the day at cookery school and ever since they have been the total dream team in life and business.

Working for Patron London for over 4 years. While overlooking the business development and marketing for all brands, Helena also does photography, builds our websites and designs all advertising materials.

With 8 years of hospitality experience, from local cafes to Michelin-star restaurants, Cat now manages the front-of-house team at Patron Kentish Town, overlooks the day-to-day workings of the restaurant and takes part in the recruitment of new team members. Originally from Aberdeen, Scotland, Cat also studied psychology and is continuing studies for a master's in child psychology.

Born in South England, Jay came to London after returning from a study of film; where he practiced the art of cinema. Now transitioning his style from the camera to the glass. Jay manages the bar, designs new cocktails and overlooks the special events.

A chef for 6 years, after his training he spread his wings working in the Alps and Corsica. We have been lucky to have him as part of the Patron family for 4 years. He manages day to day operations that involve food across all sites, works closely with suppliers and creates new dishes for Patron Restaurants.

Originally from Asturias, Spain - a beautiful city where people love to cook and know how to appreciate good food. He arrived in London in 2020 and almost immediately became a part of Patron London family. Saul loves seafood, cheese and a good piece of red meat. He's a huge sports fan and was a handball player back in Spain. While being a chef at Patron Restaurants, Saul also overlooks the management of Maison Patron.

Born in Puglia Italy, Stefano recently moved to London after completing a Mixology Academy in Rome. He enjoys sports and training as well as reading books and going for long walks. At Tabac Bar he's the creative spirit that loves to experiment with new drinks and design exciting new cocktails for all sites.
